GF Banana Pancakes

Ingredients
2 ripe bananas
2 eggs
2/3rds c. almond meal
Pinch of sugar
Bacon grease, cooking suggestion
Butter, serving suggestion
Maple syrup, serving suggestion

(Makes 4)

Mash the bananas in a mixing bowl, with the pinch of sugar.
Beat in the eggs.
After a few minutes of beating the wet mixture, add in the almond meal and beat for a few more minutes.
Heat a pan over a medium heat and add enough bacon grease to barely coat the surface.
Pour in 1/4th of the mixture.
Cook until golden brown, flipping to ensure both sides are cooked.
Serve with a thin spread of butter and some maple syrup, on each pancake.
